Fresh Fall Flavors

It’s soon to be official. The Fall season is upon us. September 23 is the official first day of Autumn and we’ve got recipes to get your kitchen filled for fresh fall flavors. Apple, pumpkin, pear and squash are just some of the key fresh ingredients for your Fall harvest.

During the Fall months, you’re transitioning from Summer warmth to the Winter freeze. Meals that warm you up from within are what you’re looking for. This Autumn, we’re supplying you with recipes made with fresh Fall ingredients. These whole fruits and vegetables combined to create meals that offer you a daily dose of important nutrients, vitamins and great flavors for the season. Here a few great recipe ideas to make in your Power Juicer for you and your family.

Autumn Squash Loaf
Ingredients:
2 cups whole-grain flour
½ tsp. baking soda
2 tsp. cinnamon
¼ tsp. salt
1 tsp. baking powder
½ cup honey
3 tsp. vanilla
2 eggs
½ cup canola oil
1 ½ cups yellow squash pulp
1 ½ cups mashed or minced datesDirections:
Pre-heat the oven to 350°F. Grease the loaf pan. Beat the squash and dates well. Slowly add canola oil and blend well. Slowly add eggs and vanilla. Continue to beat the mixtures. Combine all dry ingredients to the mixture. Gently blend. Fill the loaf pan. Bake for approximately 1 hour.

Sweet Potato Quiche
Ingredients:
4 scallions (trimmed)
2 cup non-fat milk
3 eggs
3 egg whites
6 mushrooms
1 sweet potato
1 cup goat cheese
Directions:
Juice the potatoes, scallions, and mushrooms. In a bowl, add the juice, the pulp, goat cheese and the eggs. Mix well. Pour into a glass pie dish. Place in 350°F oven for 10-15 minutes.

Beet Spinach Cherry Juice
2 cups spinach
2 apricots (pitted)
1 cup cherries (pitted)
1 beet (leaves removed)
Directions:
Juice all the ingredients.
