New Hispanic-Influenced Recipes for Hispanic Heritage Month

Every October 15 begins a month long celebration of the Hispanic culture. Hispanic Heritage month begins today and in honor of this unique culture we’ve created some new Hispanic-influenced recipes for you to try in your Power Juicer. Get ready to take a trip to the shores of Cuba and the camp of Mexico with two recipes that will blow you away.

The Mojito is a traditional Cuban highball cocktail. Although it’s exact origin in Cuba has been debated, it’s is deeply routed in the country’s history and culture. Made with a variety of simple ingredients and garnished with a traditional Cuban sugar cane, this is a favorite to many people.

Mojito
Ingredients:
½ lime (peel intact)
1 tbsp. agave
½ bunch mint
2 oz. rum
½ cup water
Directions:
Juice the lime and mint. Add all ingredients in a shaker glass with ice. Shake well and strain into glass. Garnish with additional fresh mint.

Tortilla soup. It’s not just a movie. It’s a traditional Mexican meal. Although the exact origin is again a mystery to most, it’s known to be Mexican-rooted soup. It’s unique flavors and ingredients make this a favorite Hispanic dish.

Tortilla Soup
Ingredients:
8 tomatoes
1 jalapeño pepper (stemmed)
1 pasilla pepper (stemmed)
1 scallion (trimmed)
5 garlic cloves (peeled)
1 cup vegetable broth
2 carrots (top removed)
1 yellow bell pepper (stemmed & seeded)
½ lime
¼ cup cilatro leaves
½ tbsp. ground cumin
1 tsp. sea salt
½ tsp. freshly ground black pepper

Directions:
Juice the onion and garlic. In a medium pot on medium heat, sauté the pulp and juice in oil. Juice the rest of the vegetables and add the juice to the pot with half the pulp. Juice the lime and set aside. Cook for 30 minutes on low heat. Add the lime juice and season with salt and pepper. Serve with multigrain tortilla chips.
