Summer Sides

It just wouldn’t be a complete summer meal without a few tasty additions. From fresh baked bread to the perfect topping for grilled corn, here are a few of our favorite summer meal companions.

Papaya Lime Salsa with Grilled Fish
Ingredients:
1 cup papaya pulp
¼ cup papaya juice
1/8 cup cilantro leaves (chopped)
½ lime (peel intact)
¼ jalapeño (diced)
¼ red onion (peeled & diced)
Directions:
Juice papaya and lime separately. In a bowl, mix all the ingredients. Garnish with cilantro and serve with grilled fish.

Fruit Gazpacho
Ingredients:
2 pints raspberries
1 ½ tbsp. agave
½ cup mint
6 kiwis (peeled)
½ lime
½ honeydew (rind removed & seeded)
½ cantaloupe (peeled & seeded)
¼ tsp. sea salt
½ jalapeño pepper (stemmed)
Directions:
Juice the fruits and vegetables. Mix the juice and pulp with the remaining ingredients.

Orange Shortbread
Ingredients:
½ cup orange pulp
2 tbsp. orange juice
1 cup flour
1 cup whole-wheat flour
1 cup butter substitute
½ cup organic sugar
Directions:
In a bowl, combine sugar, butter substitute, and the pulp until creamy. Add flour and whole-wheat flour. Mix well. Refrigerate for 2 hours. Spoon 1 tbsp. of dough onto cookie sheet and repeat this step until all the dough is finished. Bake for 10 minutes in a 350°F oven.
Note: When juicing oranges for this recipe do not peel.
