The Perfect Cool-Down Summer Recipe… Soup?

That’s right! Soup is a great year round meal… chilled soup that is. It’s true that the HealthMaster can make great hot soups. But this summer, try making a chilled summer to cool off your down. Read on for a few recipes.

Creamy Tomato Basil
2 cups tomato juice
1 tbsp. fresh basil juice
¾ cup plain yogurt
Mix all ingredients well. Serve chilled. Garnish with fresh basil.

Carrot Apple Soup
2/3 cup carrot juice
1 tsp. carrot pulp
½ cup apple juice
1 tsp. apple pulp
¼ cup walnuts (finely chopped)
Mix well and serve chilled.

Chilled Cucumber Soup
2 seedless cucumbers (peeled)
½ red onion (peeled)
2 garlic cloves (peeled)
1 tbsp. red wine vinegar
¾ cup low-fat yogurt
freshly ground black pepper and sea salt to taste
Juice the first three ingredients. In a bowl, mix the juice and ½ the pulp with the remaining ingredients.
