Your juicer isn’t just for juicing!

Make this easy, tasty, light and super-healthy salad dressing!

Strawberry Balsamic

1 cup of strawberry juice

1 tablespoon strawberry pulp

1/4 cup balsamic vinegar

Mix all ingredients well

Salad suggestion: Top a base of romaine, endive and radicchio with sliced strawberries, mango slices, goat cheese and pecans. Drizzle with dressing. Add salt and pepper to taste.

Tips for juicing greens

If you are new to juicing you might be interested in the health benefits of juicing dark leafy vegetables but intimidated by what to do or worried about the taste.

Here are a few tips for you newbies:

  1. Keep it sweet. If you are new to juicing (and have no health issues that would require you to avoid natural sugars found in fruit) I would encourage you to start your juice with a sweet fruit like apple, orange, watermelon or pineapple. Carrots also tend to add sweetness. The sweetness of the fruit goes a long way to balance the bitterness in some greens.
  2. Cool as a cucumber. Juicing a cucumber or two is a great way to add a mellow, freshness that will also balance your juice out.
  3. Experiment. Some people find spinach to be much milder than kale. Use sparingly at first and then add more as you develop a taste for it or when you discover you like it!
  4. Google away! Look through this blog, peruse Pinterest, check out books from your local library and find interesting flavor combinations and good recipes to try.

Beet Juice recipe

1 red beet

5 carrots

3 celery stalks

1 cucumber

1 bosc pear

1 lemon

Directions

  1. Wash and rinse all fruits and vegetables
  2. Cut off ends of carrots and celery and cut into halves
  3. Cut off ends of cucumber and cut into quarters
  4. Cut pear into quarters and remove core
  5. Cut off ends of beet, peel, and cut into quarters
  6. Juice in juicer
  7. squeeze lemon into juice

5 cheap and easy ways to get healthier now

As someone who juices you are already doing something easy and great for your health.

Here are five more easy and great things you can do:

  1. Drink more water! Hydrate, hydrate, hydrate. Water is essential for healthy living. You can read about all the health benefits here. If you don’t like plain tap water then juice a lemon, lime, orange or even a cucumber and add it to a pitcher of water for a little natural flavor.
  2. Get a pedometer. A pedometer counts the steps you take each day. Whenever I wear one I am reminded to try to get more steps in. I play a little mental game where I try to get just a few more steps in today then I got yesterday. It holds me accountable for movement. You can pick one up online or in stores pretty inexpensively. I’ve even seen them at the dollar store!
  3. Enlist an accountability partner. My twin sister and I speak every night about the day’s choices in food and activity. Somehow, checking in with someone keeps me on path and when I’m struggling, having someone to talk to really helps to get me motivated again. In addition, there is something about giving advice to someone else. It reinforces in your own head what you should do.
  4. Keep a journal. My journal is an overall wellness journal and I track how I’m feeling, the food I’ve eaten, the exercise I’ve done and the small victories I’ve had. If I skipped a piece of cake or parked the car further from the store - I write it down as a victory. I also remember to write five things I have gratitude for. Having gratitude and celebrating victories helps to boost mood, alleviate stress, and balance you out. It’s almost impossible to be in a bad place when you are truly thinking about the things you are grateful for.
  5. Make it social. Find health bloggers, healthy Facebook pages and other healthy social media forms especially if the people in your own life aren’t on the same page as you. I have found great recipes, exercise challenges, motivational quotes, book recommendations and even new friends from “hanging out” on healthy web pages.

Pineapple Raspberry Sorbet

1/4 cup of pineapple pulp (reserved from juicing)

1/4 cup raspberry pulp / with the juice

Mix the ingredients and freeze. Enjoy!

Natural ways to dye your Easter eggs this year

Skip the potentially unhealthy store-bought dyes and try these fresh ways to color your Easter eggs this year!

Robin’s Egg Blue Dye
half head of red cabbage
3 cups water, 2 cups water
1 tbsp. white vinegar
Cut red cabbage into pieces. Juice the cabbage. Combine the juice and some of the pulp with 3 cups of water and 3 tbsp. vinegar into a saucepan. Bring to a boil. Once it comes to a boil, reduce to medium heat and reduce the liquid by half. Add 2 cups of cold water and strain into a bowl. Add hard-boiled eggs and let sit for 2-4 hours. Take eggs out of the dye and let dry for 30 minutes.

Vibrant Yellow Dye
2 large carrots
6 tbsp. curry
3 cups water, 2 cups water
3 tbsp. white vinegar
Juice the carrots Combine carrots with some of the pulp and 3 cups of water and 3 tbsp. vinegar into a saucepan. Add the curry, and bring to a boil. Once it comes to a boil, reduce to medium heat and reduce the liquid by half. Add 2 cups of cold water and strain into a bowl. Add hard-boiled eggs and let sit for 2-4 hours. Take eggs out of the dye and let dry for 30 minutes.

Rustic Red Dye
2 large beets
3 cups water, 2 cups water
3 tbsp. white vinegar
Cut beets into chunks. Juice the beets. Combine beets with 3 cups of water and 3 tbsp. vinegar into a saucepan and bring to a boil. Once it comes to a boil, reduce to medium heat and reduce the liquid by half. Add 2 cups of cold water and strain into a bowl. Add hard-boiled eggs and let sit for 2-4 hours. Take eggs out of the dye and let dry for 30 minutes.

Leafy Green Dye

3 cups packed red onion skins
3 cups water, 2 cups water
1 tbsp. white vinegar
Bring all ingredients to a boil in a large pot and continue to boil until half the liquid is reduced. Strain and soak hard-boiled eggs for 15-20 minutes. Take eggs out of the dye and let dry for 30 minutes.

Spring is here which means you might be thinking of starting a garden.

If you are new to the idea of gardening, you are not alone.

 

A few tips to get started:

  • Do a google search about what crops grow best based on your region and then find the timeline of when to plant. It might be sooner than you think!
  • Call your local nursery or even Home Depot or Lowes and inquire if they have or know of free gardening seminars - often they are available and an expert is on hand to answer your questions.
  • Phone a friend who has been gardening for years and pick his or her brain to see if gardening is right for you. Find out the time and space commitment involved for what you hope to grow.

Easy ways to get healthier

Becoming healthy doesn’t have to be overwhelming! Doing just a few ‘good for you’ things a day can really add up in a big way. Here are four easy healthy habits to sneak into your day:

1. More veggies and fruits. Pull out your Jack LaLanne Power Juicer and leave it out. You’ll be more apt to get in the habit of using it daily if you see it and its conveniently located (rather than up in a high cabinet some place.) Start each day with your favorite juice to kick off your day in good health.

2. Move. You don’t have to do an hour spin class or a five mile run to get the benefits from activity. Take every opportunity you can to get a little movement in – hand deliver messages to coworkers in lieu of Emailing them, park as far as you can and walk, take the stairs instead of the escalator. Every opportunity to move is a step in the right direction. Even just standing while on the phone or watching TV instead of sitting will burn extra calories – add a squat or a bicep curl while you’re at it!

3. Hydrate. Before each meal, drink one 8-oz. glass of water. Hydration is essential for well-being and many of us walk around in a half-state of dehydration on a regular basis. Not only is water vital for good skin and good health but it will also fill you up before eating and help you to slash off a few calories.

4. Journal. Holding on to emotions can really be the undoing for many. Many of us comfort eat and drink. Turning to a journal and writing out your feelings help! If you’re feeling down writing a list of ten things that you are grateful for can instantly change your mood and perspective on things. If you’re angry at a friend, writing a letter (perhaps that you’ll never send) helps to “get it out” and aids in allowing you to move forward or figure a way to work it out. Journaling can take as little as five minutes and is a healthy habit to incorporate in your day.

I used to get pretty tired right around 3 PM every day. Since taking a nap isn’t an option, I often reached for coffee or sugar. Both would backfire. Sugar would cause me to crash a very short time later and caffeine would leave me tossing and turing later that night.

So here is what I do now:

  1. Eat better. The saying, ‘You are what you eat” truly is on the money. Eating processed and fast foods do not provide the vitamins and nutrients that your body needs, so you are left feeling sluggish. By having super foods like whole grains, lean proteins, vegetables, fruits, nuts, beans and other healthy foods - you are fueling your body for success.
  2. Drink water. Often we begin to feel sluggish when we are slightly dehydrated, sometimes (for me) I’m just not thirsty and I have to remember to drink water.
  3. Move it. Sure, when you’re ready to take a nap the last thing you feel like doing is exercising but believe it or not, exercise can turn your sleepy self right around! Case in point, my four year old decided to wake up at 2AM on Friday night! He had us up nearly all night. I had an early morning run scheduled on Saturday morning with a few friends and didn’t want to bail. I yawned and cursed all the way to the park, I was so sleepy! However, as I ran I began to perk up. Afterwards I felt alert and much better than I did before.
  4. Juice! I have found that strategically making a juice helps me to full-fill those vitamin and nutrient requirements needed to maintain energy. Below is a power juice specifically created to boost your energy.
